Methi palak paneer with mixed veg

This is my new try for the first time .I had home made paneer so wanted to make some thing different , healthy , tasty and easy to digest . Tried this and turned out so tasty that kids loved too. One thing I should say palak taste is not dominating and i can feel cream and methi combined taste along with paneer carrots and aloo makes this dish flavoursome and mouth watering 

Ingredients I used 

Palak - 2bunches
Methi leaves - 1 bunch
Carrots - 3 medium
Potatoes - 2 medium
Paneer - 250gms
Onion - 1large
Tomatoes - 3
Coriander leaves
Green chilli - 4 to 6
Jeera - 1tbs 
Kasoori methi - 1.2 tbs
Dhaniya jeera powder - 1tbs 
Garam Masala - 1 to 1.5 tbs 
Ginger garlic paste - 1tbs
Oil  - 3tbs
Turmeric 

Firstly rince greens to remove dirt  , now take a glass of water in a wide bowl and let boil now add palak to boiling water and when u notice that palak is reduced remove and let palak cool and transfer in to a blender aling with green chilli and coriander leaves now make in to a fine paste and keep a side. Remove leaves from stems of methi rince chop and keep this also a side


Take a heavy bottomed pan keep flame on medium low and let oil gets heated


 Now add jeera
 When jeera turns color add chopped onion
 Let onion turns brown
 After onion turning brown add ginger garlic paste

 When ginger garlic paste leaves Oil out time to add chopped veggies and green chilli and salt
Cover and cook till veggies are half cooked stirring between

 Veggies are half cooked
 Now add chopped tomatoes
 Mix well cover and cook till tomatoes become mushy

 Tomatoes became soft and mushy
 At this time add chopped methi leaves
 Cook till methi is completely cooked
 Now add Dhaniya jeera powder, turmeric, kasoorimethi  mix well and cover and cook for 1 or 2mins


 Now add pal paste
 A water to make gravy to this add salt ( be careful we added salt bfore)
 Now goes in  chopped palak
 Mix everything well and add cream to gravy
 Cover and cook for 2 mins
 Done , serve with chapathi
 Note : u can add green peas also
             Instead of garam Masala u can add kitchen king Masala also for added
             Taste
              If u feel like curry is burning reduce flame to Simmer

Egg ghee karam dosa

Egg ghee karam dosa I used regular dosa batter for making this dosa. As today is raining heavily (because of cyclone)and school has declared holiday for kids so wanted to make some thing crispy spicy tasty and healthy and also that woudnt take much time and I think egg dosa is right 

Ingredients I used

Dosa batter
Chopped onion 
Egg
Oil 
Gun powder

On a heated dosa pan pour a laddle full of dosa batter



Spread out batter to nice circle shape

Now add ghee and reduce flame to medium
Quickly onion and gun powder
Now break an egg on dosa
Spread egg all over dosa and again add ghee and fry till dosa turns golden brown
Now dosa is done and egg is also completely cooked
Serve hot

Sandwich with leftover cutlet

I have posted my veg cutlet recipie before . When I made them few are left so the next day  I got an idea and made sandwiches as after school snack they are super easy to make and super tasty too. My kids loved it.

Ingreedients I used

Left over cutlets
Tomatoes sliced
Onion sliced
Tomato ketchup
Bread slices
Butter

Method

All u need
 Take a bread slice and apply sauce on one side for both the slices
 Now place the bread slice on a plate facing ketchup side up and place sliced tomatoes over it
 Now place cutlets over sliced tomatoes
 Above cutlets goes onions
 Now close with another bread slice facing ketchup side down
 Apply butter on both sides of sandwich and place on a sandwich maker and toast till done
 Once done I changed its position and toasted again
Done serve hot

Veg cutlet

This recipie(Veg cutlet) high in nutrition with high fiber and loaded with vegetables and super easy to cook also . this is the best idea to give more vegetables to your kids.

Ingredients I used
Boiled potatoes - 2
Carrots - 2(grated)
Capsicum - 1
Cabbage chopped - 1cup
Bread powder from 4 to 5 bread slices
Corn flour - 2tbs
Garlic chopped - 1tbs
Crushed pepper- 1tbs
Oregano - 1tbs
Salt - 1tbs

Method

Mix together boiled potatoes , chopped carrots and chopped cabbage and chopped garlic.
To mixed vegetable mixture add chopped Capsicum salt and crushed pepper
To this add bread powder , corn flour and oregano.

Mix every thing well to form a dough

Now take a portion of dough and roll in ball and press between your palms to make a nicely flattened Cutlets and place them on a plate . Like wise make with rest of the dough

Heat thick bottomed tawa on simmer and place cutlets on heated tawa and drizzle oil over cutlets. Let them heat on one side with out turning
Keeping flame on simmer , when u notice that sides of the Cutler turns brown then flip them to other side and let other side also turns crisp and golden brown . Flip both sides couple of times till they are nice crisp and golden brown 
Done
You can make this as after school snack , school snack , tea time snack or as patties for your burger or as patties for your sandwiches it's your convenience. 

Note : you can also add sweet corn to this
If u like u can even deep fry
                 No need of adding water while mixing dough
