Carrot cake ahaaa😋so yummy I think u all know health benefits of carrots so now speaking about my cake it has all the flavours of carrot , whole wheat flour, nuts and cinnamon . This cake is so moist and melts in mouth . It is a healthy cake😋😘
Ingredients I used
Whole wheat flour - 1 and 1/2 cup
Grated carrot - 1 and1/2cup
Sugar - 3/4cup
Eggs - 2
Cinnamon powder - 3tbs
Oil(flavour less) - 3/4 cup
Baking powder - 1tbs
Baking soda - a pinch
Chopped nuts and raisins - 4tbs
Vanilla flavour- 1tbs
Method
Wash peal and grate carrots, to grated carrots add chopped nuts and raisins
To this add 4 tbs of wheat flour , gently mix every thing so that flour coats nuts and carrots well
Keep a side
Now in a mixing bowl take whole wheat flour, to this add cinnamon powder ,baking powder and baking soda , whisk every thing well , Now keep a side
Take another mixing bowl ,break eggs and add sugar
Whisk well till frothy this may take 5 mins
After 5 mins add oil ( u can add butter also, same measurement)
Now goes in vanilla , now whisk till oil mixes with egg and sugar mixture
Time to add whole wheat flour(which we kept a side)
With whisk or spatula mix gently inwards do not
Over mix
Batter looks like this
Batter is done , keep a side
Take baking tray, rub tray with butter on sides and dust with flour and place a aluminium foil or butter paper in the bottom
Now transfer cake batter in to the baking tin , tap twice and now goes in to the onen ( pre heat oven at 180degrees for 5 mins , after 5 mins keep cake tin in to oven and bake at 180 degrees for 40 mins
After 40 mins check with your knife , poke the cake if knife is clean it is baked completely, if batter attaches to knife bake for another 5 more mins .
