Veg cutlet

This recipie(Veg cutlet) high in nutrition with high fiber and loaded with vegetables and super easy to cook also . this is the best idea to give more vegetables to your kids.

Ingredients I used
Boiled potatoes - 2
Carrots - 2(grated)
Capsicum - 1
Cabbage chopped - 1cup
Bread powder from 4 to 5 bread slices
Corn flour - 2tbs
Garlic chopped - 1tbs
Crushed pepper- 1tbs
Oregano - 1tbs
Salt - 1tbs

Method

Mix together boiled potatoes , chopped carrots and chopped cabbage and chopped garlic.
To mixed vegetable mixture add chopped Capsicum salt and crushed pepper
To this add bread powder , corn flour and oregano.

Mix every thing well to form a dough

Now take a portion of dough and roll in ball and press between your palms to make a nicely flattened Cutlets and place them on a plate . Like wise make with rest of the dough

Heat thick bottomed tawa on simmer and place cutlets on heated tawa and drizzle oil over cutlets. Let them heat on one side with out turning
Keeping flame on simmer , when u notice that sides of the Cutler turns brown then flip them to other side and let other side also turns crisp and golden brown . Flip both sides couple of times till they are nice crisp and golden brown 
Done
You can make this as after school snack , school snack , tea time snack or as patties for your burger or as patties for your sandwiches it's your convenience. 

Note : you can also add sweet corn to this
If u like u can even deep fry
                 No need of adding water while mixing dough

Chat pata Diamond cuts

Chat pata Diamond cuts are easy to make and super tasty and tangy too . Give them a try and keep them in your kids snacks box , look at their faces after coming from school . My son's face is filled with joy and his friends too likes them.
This is one of the easy snack Recipie that you can make before packing lunch and one more thing if they taste this they don't ask u to buy lays and kurkure

Ingredients I used
Wheat flour - 2cups
Bombay rava - 2tbs
Oil for deep frying
Salt - 1tbs
Turmeric powder - a pinch
Red chilli powder - 1 to 2 tbs (according to spice)
Kasoori methi - 1 and 1/2 tbs
Chat Masala - 1tbs


Method

In to a mixing bowl add wheat flour, Bombay rava and oil now rub every thing with both of your hand

 Now add water to the flour and make like chapati dough
Make it into a soft dough , not too loose or not too tight and rest for 10mins
After 10mins knead the dough nicely and flattern it to add salt , turmeric , red chilli and kasoorimethi 
Close dough from all sides to cover masala and again knead the dough  to a soft ball

Now greese the counter top with oil 
Take a portion of dough and roll out in to a thin chapati
With the help of knife cut chapathi in to diamond shapes
Remove diamonds from counter top and place on a plate or laddle
Now drop the diamond cuts in to a  heated oil(keeping flame on medium)
Fry till golden brown stirring on both sides
After turning golden brown remove from oil and transfer to a clean bowl
Like wise do with rest of the dough
Done . Now transfer fried diamond cuts in to a mixing bowl and add chat Masala
Gently mix with your hand so that chat Masala coats to each and every diamond cut
Done. Your diamond cuts are ready to serve . Enjoy these at any time . Keep as snacks in to your kids snacks box to school ,believe me they don't again ask you for lays or kurkure

Note :  you can replace wheat flour with Maida also

              You can add Masala while making dough also

          DO not dust counter top while making chapathi       when you fry cuts flour sinks down and burn

          You can add more chat Masala if you want more tangy ness

Jaggery diamond cuts


A simple snack ,super tasty, easy to make with less ingredients. I used whole wheat instead of Maida and jaggery instead of sugar. As you all know jaggery acts as a detox and helps to cleanse liver by flushing out toxins from our body and jaggery is loaded with antioxidants and minerals like zinc and selenium. Jaggery prevents constipation

Ingredients I used

Wheat flour - 2cups
Bombay rava - 2tbs
Jaggery - 350gms
Oil for  deep frying

In a mixing bowl add wheat flour, Bombay rava and oil . Mix every thing with hand.
Now add water and make in to thick dough 
Dough is ready
Grease floor with oil
Take a portion of dough and roll out in to a chapati
Using knife cut rolled chapati in to diamond shape
Now place diamonds on a plate
Keep flame on medium and let oil heat , when oil is heated drop diamond cuts in to heated oil.
Turn both sides while frying
Diamond cuts are fried
Now transfer in to clean bowl . Like wise make fried cuts with rest of the dough also
Now to make jaggery syrup to coat with diamond cuts take jaggery in to a bowl and add water keeping flame on medium
Bubbles are coming at this point with spoon drop few drops of syrup in to a cold water
Look if syrup poured in water turned in to a soft ball now your syrup is ready to add fried diamond cuts
Now diamond cuts goes in into a hot jaggery syrup
Mix from down to up nicely so that hot syrup is coated to diamond cuts 
quickly transfer in to a greased plate . Let them cool for a while and serve . This is a very good evening snack and your kids school snack

Aloo coconut fry

This fry curry is super simple with less ingredients and this takes less time too and best part is aloo it has lot of health benefits. Aloo is low in calorie , rich in fiber and antioxidants , a good source of vitamin B6. Aloo has no fat , no sodium and no cholesterol . MORE potassium than banana . Rich in vitamin C also. Potato improves digestion also.

Ingredients I used

Potatoes - 3/4 kg
Shreded coconut - 1/2 cup
Turmeric - 1/2 tbs
Red chilli powder (according to your taste)
Salt (according to your taste)
Oil - 5 tbs
Chana dal - 1tbs
Mustered and jeera - 1tbs
Curry leaves
 Wash , peal and chop potatoes to 1 inch size pieces
Keep flame on medium and let pan gets heated now add oil , when oil gets heated add tampering items.

After mustered and jeera starts splattering add chopped potato
 Add salt sufficient salt and mix well
Cover  and cook for 5min stirring between
Half cooked , now reduce your flame to Simmer and at this point do not close lid and fry another 5 mins , stirring in between
After 5 mins aloo is cooked completely
Now add shredded coconut , turmeric and red chilli powder
Mix everything and fry for 2 to 3 mins 
Lastly add pressed garlic and curry leaves and mix everything well 
Done . Switch off flame and serve with rice or u can enjoy as side dish also
