Choco dip caramelized carrots

My daughter is a teenage college going girl and I believe that nutrition requirement for girls is more than boys . The teenage years for girls can be full of studies and activity . Give them variety of foods that they get all the nutrients they needed. Give them 3 meals a day, let them enjoy low fat snack between meals such as fruits, vegetables or baked snacs instead of fried . My girl is foodie and each and every day she want new tastes that satisfies her taste buds . And also I believe that healthy eating leads to positive thinking . With out any late staring my recipie

Ingredients I used
Boiled carrots - 3big
Compound choclate - 200gms
Milk - 4tbs
Sugar - 4tbs
Honey - 1tbs
Fresh cream - 2tbs

Method

Firstly peal ,chop and cook carrots in a pressure cooker . Mean while chop choclate in to pieces and take it in to a microwave safe bowl the add milk and honey to it , let it microwave for 40 seconds now take out of the oven and with a spoon Mix every thing nicely till a thick choclate syrup is formed . Now keep the syrup a side
Now take a thick bottomed pan , keeping flame on medium low add sugar and fresh cream
Let sugar melts and become caramel , stirring regularly
When sugar turns caramel it's time to add boiled carrots

Saute till carrots are coated well and absorbs caramel sauce
Now carrots are nicely coated and absorbed all the sauce
Transfer in to a bowl and let carrots cool a bit
Serve with melted chocolate syrup
Note

For making caramel sauce u can melt sugar first and then add fresh cream (I was in a hurry so did like that both tastes same )

Carrot pesarattu

Imagine your self six months from now , start but do not stop it will be worth . Being healthy is not a goal it's a way of living . There is no better time than now to start living healthy . Here I want to show how I include more veggies and fruit in my every day recipies . If you like them give them a try and let me know

Ingredients I used
Carrot - 2 big
Moong dal(pesara pappu)- 1cup
Rice - 3tbs
Ginger - 1 1/2 inch piece
Chopped onion from one onion
Chopped green chilli
Green chilli - 2
Jeera - 1tbs
Salt - 1tbs

Method

Let Moong dal and rice soak for 5 to 6 hours . Boil ur carrots . Wash and peal ginger
 In to a blender goes in carrots,  dal , rice ,ginger, green chilli ,jeera and salt
 Blend to smooth paste
 Heat dosa tawa
Pour laddle full of dosa batter on a heated tawa
 Spread dosa batter in to nice circle shape and apply oil
Now add chopped onion , shredded ginger and jeera
 Let pesarattu turn brown
 Fold and now ready to serve
Transfer into a serving plate and serve hot

Carrots improves your eye sight ( I am sure every one knows this )
Carrots are high in dietary fiber reduces your constipation
Carrots help in loosing ur weight
Carrots gives u glowing skin(I like this part)
So this is the reason I include lot of carrots in our diet
