Aloo coconut fry

This fry curry is super simple with less ingredients and this takes less time too and best part is aloo it has lot of health benefits. Aloo is low in calorie , rich in fiber and antioxidants , a good source of vitamin B6. Aloo has no fat , no sodium and no cholesterol . MORE potassium than banana . Rich in vitamin C also. Potato improves digestion also.

Ingredients I used

Potatoes - 3/4 kg
Shreded coconut - 1/2 cup
Turmeric - 1/2 tbs
Red chilli powder (according to your taste)
Salt (according to your taste)
Oil - 5 tbs
Chana dal - 1tbs
Mustered and jeera - 1tbs
Curry leaves
 Wash , peal and chop potatoes to 1 inch size pieces
Keep flame on medium and let pan gets heated now add oil , when oil gets heated add tampering items.

After mustered and jeera starts splattering add chopped potato
 Add salt sufficient salt and mix well
Cover  and cook for 5min stirring between
Half cooked , now reduce your flame to Simmer and at this point do not close lid and fry another 5 mins , stirring in between
After 5 mins aloo is cooked completely
Now add shredded coconut , turmeric and red chilli powder
Mix everything and fry for 2 to 3 mins 
Lastly add pressed garlic and curry leaves and mix everything well 
Done . Switch off flame and serve with rice or u can enjoy as side dish also
