Dry fruit rolls


Welcome back to my healthy cooking series😊
Today I was in hurry and has no much time for snack to pack for lunch and was thinking for quick and easy recipie that should be done in minutes and the result is awesome!!!

Ingredients I used

Cashew nuts - 10
Badam - 10
Elachi pods - 3
Sugar - 2tbs
Ghee - 2tbs
Chapathi dough - big lemon sized

Method

Firstly in a blender add cashew , badam , elachi and sugar


Now blend everything to coarse powder

Now roll out chapati dough to thin chapati 

Place the rolled chapati on a hot tawa and fry both the sides adding ghee

Transfer fried chapati in to a plate

Now spread the prepared dry fruit powder all over the chapati 

Now add ghee on the top of dry fruit spread

Now roll the chapati inwards

After rolling cut into small pieces with the knife 

Now done with your healthy school snack
Pack with lunch and it's highly nutritious

Protein packed egg muffins

Eggs are incredibly nutritious and economical ,This comes with 77 calories, 6 grams of protein and 5 grams of healthy fats . The protein and fats in eggs helps to keep you satisfied for longer and reduces cravings from eating other snacks.  People who eat eggs for breakfast  lose weight faster . It is true that eggs do contain cholesterol,  this cholesterol do not show any effect on your cholesterol levels and it's proven.  Include eggs in breakfast for your teenage girls and growing boys .

Ingredients I used

Chicken - 4 to 5 pieces
Eggs - 4
Capsicum chopped - 3 to 4 tbsp
Sweet corn kennels - 4 tbsp
Pepper powder - 1tbs
Garlic chopped - 1tbs
Salt - according to taste
Oil - 2tbs

Method

Keeping flame on medium ,place a tawa on the flame when tawa gets heated add oil to fry chicken pieces , after a minute aprinkle salt and pepper .fry chicken pieces turning both sides till they slightly brown , this may take 5 mins. After frying transfer in to a plate and let the pieces cool for a while ,when cooled chop in to small pieces
Now break eggs in a wide bowl add chicken pieces chopped capsicum , corn ,salt , pepper and chopped garlic now mix enery thing nicely.

  Grease muffin moulds with oil and  with the help of a ladle pour a ladle full of egg mixture in to muffin moulds.
Preheat oven at 180 degrees centigrade for 5mins after 5mins place the muffin moulds into the oven and bake for 15min at 180degrees centigrade

 Done , rest for 2mins in the oven , take out and transfer into a serving plate
 Serve hot with a glass of juice or smoothie😊

Carrot ragi porridge hor healthy weight loss

Ravi is a finger millet common in South India, major portion of is carbohydrate followed by protein and dietary fiber , ragi is rich in mineral calcium for our healthy bones and also have iron , it is the better option instead of rice and chapati . Ragi helps in losing weight and helps in shedding extra calories . I also added carrots to this which makes highly nutritious and tasty too.

Ingredients I used
Ragi flour  - 1/2 cup
Carrots - 2
Jeera - 2tbs
Oil - 1tbs
Curry leaves few
Water - 3 cups
Buttermilk- 1glass
Salt - according to taste

Method
Take ragi flour in a bowl mix with 1/2 cup water to make paste and keep aside


Keeping flame on medium place a thick bottomed vessel on flame , let the vessel gets heated
Now add oil ,when heated add jeera, chopped carrots, and curry leaves , toss for while till nice aroma releases
Now add water and salt

Cover and cook for 5 mins till carrots sofens
Carrots are half cooked now drop in kept a side ragi paste in to boiling carrots

Mix with laddle to prevent forming from lumps Cook till mixture forms a paste with out any lumps, if paste is too thick u can add more water and loosen the paste


Cooked , let porridge cool completely 

After completely cooling down add buttermilk
Mix well with out any lumps
Done , enjoy wholesome of goodness

Sambar rice for healthy weight loss



If u maintain a healthy diet it is the solution to many problems and you will see pounds coming down . Fruits and vegetables are gifts from mother nature if u add more of these in your daily diet they help to heal your body and keeps you full longer . I dont find difficult to maintain a healthy diet now because i 💖 the change . And I would call this Sambar rice recipie as balanced diet

Ingredients I used

Rice - 2cups
Toor dal - 2 cups
Water - 10cups(To cook rice and dal)
Carrots - 2big
Beetroot - 1big
Radish - 1 big
Tomatoes - 4 big
Brinjal - 4
Bottle guard- 5 inch piece
Sambar powder - 4tbs
Turmeric powder - 1tbs
Red chilli powder - 2tbs
Tamarind water - extracted from lemon sized tamarind
Jaggery - a small piece
Salt - according to taste
Ghee - 3tbs
Hing  , curry leaves and chopped Coriander leaves

Method
Firstly take rice and dal wash ,  then  in a pressure cooker cook for 5 whistles , keep a side

 Chop all veggies
 Now drop chopped vegetables in to pressure cooker (This makes your cooking time faster)
Now add salt , turmeric and red chilli powder 
Now  goes in tamarind water
Quickly coriander  , curry leaves and jaggery now close lid 
 Keeping flame on medium cook for 1 whistle (If it keep flame on high you can wait for 2 whistles). Now switch off the flame and wait for lid to fall down
Vegetables are cooked perfectly

Keeping flame on medium high , Take a thick bottomed pan and place on the stove now add ghee and let ghee gets heated after heating tamper with dry chilli , curry leaves , jeera , mustered , hing and lastly curry leaves
When seasoning is done immediately transfer cooked veggies in to the seasoning
 Now add Sambar powder and cook for a minute
 After a minute transfer cooked rice and dal into vegetable mixture
Mix nicely till rice completely mixes with sambar
If rice is too thick u can add 1 cup of water (u can skip this If it is runny)
Top with ghee
Now feep flame on simmer ,Close with lid and cook for 5 mins

 Done , look at the beautiful color of rice because of beet root I added , serve hot😊

Whole wheat carrot cake


Carrot cake ahaaa😋so yummy I think u all know health benefits of carrots so now speaking about my cake it has all the flavours of carrot , whole wheat flour, nuts and cinnamon . This cake is so moist and melts in mouth . It is a healthy cake😋😘

Ingredients I used
Whole wheat flour - 1  and 1/2 cup
Grated carrot - 1 and1/2cup
Sugar - 3/4cup
Eggs - 2
Cinnamon powder - 3tbs
Oil(flavour less) - 3/4 cup
Baking powder  - 1tbs
Baking soda - a pinch
Chopped nuts and raisins - 4tbs
Vanilla flavour- 1tbs

Method
Wash peal and grate carrots, to grated carrots add chopped nuts and raisins
 To this add 4 tbs of wheat flour , gently mix every thing so that flour coats nuts and carrots well
 Keep a side

Now in a mixing bowl take whole wheat flour, to this add cinnamon powder ,baking powder and baking soda , whisk every thing well , Now keep a side
 Take another mixing bowl ,break eggs and add sugar
 Whisk well till frothy this may take 5 mins
 After 5 mins add oil ( u can add butter also, same measurement)
 Now goes in vanilla , now whisk till oil mixes with egg and sugar mixture
 Time to add whole wheat flour(which we kept a side)
 With whisk or spatula mix gently inwards do not
Over mix
Batter looks like this

Now add grated carrots and nuts mixture and mix gently ,do not over mix
Batter is done , keep a side
Take baking tray,  rub tray with butter on sides and dust with flour and place a aluminium foil or butter paper in the bottom
Now transfer cake batter in to the baking tin , tap twice and now goes in to the onen ( pre heat oven at 180degrees for 5 mins , after 5 mins keep cake tin in to oven and bake at 180 degrees for 40 mins
 After 40 mins check with your knife , poke the cake if knife is clean it is baked completely,  if batter attaches to knife bake for another 5 more mins .
